		<description>Next time have him pluck the bird whole (it&#039;s not that hard nor time consuming) and then roast the whole bird using the Alton Brown method of brining, brief roasting at high temp, then covering breast with foil - and removing at 161 degrees and resting.  Unbelievable.  Tastes like turkey should taste!  And it will be moist, juicy and tender no matter how old the bird.  And the dark meat on sandwiches the next day is incredible - very dense - but not tough - flavorful and lean, organic great eats!</description>
