This is great, as I'm planning on making sweet potatoe duck fries tonight to finally use up all the duck fat rendered from my braised duck like 6 months ago! (I sniff-checked it, still good!). Thanks for the tips, here's hoping all turns out well!

I like to cook lengua in the crockpot.I start with onion, garlic, cumin, salt and pepper then cover with water. Set crockpot on high for 3 hours then on low for 3 hours.Top with your choice of Mexican condiments on a grilled corn tortilla in a smudge of butter. My son and I have ate a whole tongue in one sitting.Try it you'll like it.

You did not mention when you added the wine in your recipe. Since it was not mention, I forgot to add it. I am assuming that you add it to the veggies before you add the stock. Nor did I add the celery because I didn't have any. The soup was wonderful even without the celery and wine. Thanks for a great recipe!

I made this pizza a week or so ago, with a couple of tiny moderations. DEELISH! Yay to whomever first created this pizza. First, I used a homemade whole wheat crust, as I have tried and hated TJ's dough. I've just always made my own crust using an easy recipe I read on Epicurious a very long time ago. Second, skipped the rosemary as we had no fresh herbs on hand and I didn't think dried would go well. Third, I added mushrooms. I know it's not the same recipe but wow! I can't wait to make it again.

I did layers with bananas and cooked it for 20 minutes at 350 (I was in a hurry). It didn't soak in all the way or change the shape of the graham crackers, but it was still really, really good.

The chapati cooked with oil or ghee is not called chapati, its called 'Paratha'.
And it's not only the Indian. And hands are used to make a dough.

I have to admit that I was a little dissapointed on the fries. Yes, they are flavorful, but certainly not the best fries I've ever eaten. I didn't have to make any changes since I already pre-season and do everything you suggested for the fries, so our biggest change was to fry in duck fat instead of oil. I have to say that we were dissapointed. Yes, they are creamier, but they are also not as crunchy as when you use oil. My son really liked them, but they are simply not the best way to fry. But with that said, in my culture most of the staple foods are fried, therefore I might be a little bias and have a lot more experience with fried foods.

A couple of years ago I used the same recipe for chocolate eclairs and I felt the same way about the custard. I thought it was too heavy and gummy. Pate choux can be finicky, but I did use parchment and they came out great. Really just looking at the pastry wrong could hurt your chances lol!
