I know, I know. Kimchi isn’t cooked. It’s pickled.
But what if you want the flavors of kimchi and don’t have time for the fermentation process? That’s how I came up with this dish. I thought about kimchi: cabbage that ferments in a brine including chilies, garlic, ginger, green onion and other ingredients.
I minced some garlic, ginger and onions, then mixed it with sriracha hot sauce. I added soy sauce because it is salty and made from fermented soy beans. To add to the fermented flavor, I used a little bit of fish sauce. (Some regions use salted anchovies or shrimp.) I also added some rice vinegar for more acid and because it too is fermented.

I briefly cooked some cabbage (regular green since I didn’t have napa) in a hot pan with just a little water to soften the leaves, but maintain crispness. Then I added it to my sauce, which I wanted to leave uncooked to keep the sharpness of the onions and garlic. I sprinkled on some sesame seeds and let the whole thing cool.
It’s not quite kimchi, but it worked well with the kogi-style beef and lettuce cups we had for dinner. The next day I made some more kimchi-flavored cabbage and ate it hot over rice.

With a big bunch of spinach wilting in the fridge, I went to Gourmet.com and sifted through a few pages of search results before I found this Vegetable Soup with Basil and Garlic Sauce. It couldn’t have been more perfect.
The first ingredient was fennel bulb, which is something I’ve been looking for a reason to buy lately since it is normally expensive in the States, but here I got a bulb for the equivalent of 33 cents. The next ingredient was pancetta, which usually indicates a recipe will be delicious, plus, I had some in the fridge. Carrots, cabbage, zuchinni, potatoes, onion? All things I already had. I picked up some fennel and white beans, and decided to skip or substitute anything else.
Instead of basil-garlic pistou, I used a version of chimichurri I had made the night before. Chimichurri is the It-sauce in the States right now, but it’s an Argentine classic made from chopped parsley, garlic, oil and a few other ingredients. Also making my soup a little more Argentine was the reggianito cheese I used in lieu of Parmigiano-Reggiano.

The addition of garlic-herb sauce is what really takes this soup to incredible heights. The combination of vegetables and beans and pancetta is quite good, but the broth would be a little bland without the shot of adrenaline from the pistou or chimichurri. As a whole, it’s a hearty but not too heavy soup, perfect for these cool days in Buenos Aires before spring arrives. Or for the start of fall, if you’re in the opposite hemisphere.

As part of my continued “culinary homeschooling,” as I like to think of it, I have been trying to understand how acids work in cooking. I wrote a bit about citrus, vinegar and wine before, but since then I have learned a lot and begun experimenting much more.
Part of that included learning more about tamarind, the sour fruit often used in Indian cooking. Michael and I used it in a coconut shrimp curry we cooked for the University Iron Chef competition. Tamarind is very sour, and when combined with the right amount of sugar and savory ingredients, offers such a unique acidity to dishes.

One night I tried using it in lieu of vinegar or citrus to make a dressing for cole slaw. We were having an Indian-inspired meal, so I combined it with cumin and cilantro, which I knew were used in many other Indian dishes. The last few times I’ve made the dressing, I’ve added lime or white wine vinegar as well, but I think the first time was all tamarind pulp. For whatever reason, there were also sesame seeds in the cole slaw the first time I made it (as you might notice in the first picture.) Now I just leave the cumin seeds whole for texture and flavor.
I make variations of slaw a lot more often than I make leafy salads these days. Cabbage is so much cheaper and lasts a lot longer than lettuce, so for a recent college grad without a car to get to the store often, cole slaw is often my side dish of choice. When I can’t be bothered doing anything else, I toss shredded cabbage with bottled poppy seed dressing. It has just the right amount of sweetness and I prefer it to mayonnaise.
If you have a few minutes more, try the tamarind vinaigrette. It’s nice on other things too. I’ve put a similar vinaigrette on thinly sliced jicama after seeing it here.

I’m not the most patient person when it comes to food. I appreciate that slow cooking makes things really delicious, but when I’m hungry…well, then I’m going to turn the heat up on the stove or cut some corners.
Luckily, I like my meat pink and my vegetables on the crisper side.
I had a head of green cabbage in the fridge and decided it’d make a nice, easy side along with the smoked salmon fillet I bought already cooked and spiced from the Mizzou Meat Market. (Michael, Kat or one of my other friends usually comes to eat, but last night was my first solo dinner in a while.)
Braised cabbage sounded good, but who has an hour to wait on a Wednesday night after work? Instead I sauteed a large serving of cabbage with all the flavors I would have braised it in: onion, carrots, thyme and white wine. The big pieces were still a little crunchy, but I like that texture.
This is an easy vegetable side to add to your repertoire. I forget about cabbage sometimes, but it’s really good. Continue reading »
